I am about to buy some BTC on Bisq using Zelle. My account is signed and over a month old. If the seller isn’t signed and wants me to sign their account, how would I do that? I don’t want to make a purchase yet in case I am asked to sign their account.

Buyers don’t sign accounts, only signed sellers.
Sellers can’t claim a chargeback, so their security requirements are lower and limits higher.
All the signing procedure is automatic, according to the rules.
