I’ve added my XMR account in Altcoins but now need to send some. How do I get my XMR account to appear in the list of address to send from? ---

I have an XMR address from Monero GUI. Just thought I could use Bisq as a central place to handle my XMR wallet too. Maybe that’s not possible. ---

No, there is no Bisq XMR wallet. You have to send or receive the XMR to or from the Monero GUI wallet.
