Since I always insist upon privacy in my financial transactions, would it be worth it to swap some bitcoin to my Bisq account and then back to my non-custodial wallet into a newly created address to mask a bitcoin payment? Would this serve to mask transactions?

It always depends on who is watching, but in general, you would need some mixing or other ways to broken links between a trade and your coins. Bisq trades are easy to recognize in the blockchain.
Oh yes. As I remember, when I transferred from Bisq to my wallet, it actually says the is was from Bisq.
