I only have 3, and I’m afraid to restart Bisq. Running my own node is not happening. How can I increase my peers?
Try restarting Bisq, if you’re doing something sensible do a backup.

under settings > network > custom bitcoin node
“Must be comma separated list of valid addresses”
where do you get this error message? when you fill in that onion in the GUI you don’t need a comma as it’s just the one address
