How can I change the list of accepted countries in an existing SEPA account without deleting and recreating it?

Recreating would probably result in loosing the account age and signed status.

You can’t. Bisq doesn’t allow you to edit an account once you’ve created. Your only option is to create a new one.

I guess that the task Sign all payment accounts by the same name in version v1.3.6 helps in this point.
